I love Cupcakes!

I know I am not alone in my affection for these miniature sized cakes that look just as good as they taste. I walk into a store, like Gigi's, and my heart beat quickens.
Oh, hey girl! 

Sometimes I like to think that I am a baker. I imagine myself on the Food Network competing in Cupcake Wars. I even imagine what type of apron I would wear. (Don't judge.) However, I am just NOT that great of a baker. I'm impatient. I don't measure correctly. I probably make many other amateur mistakes. But I still do it because I love it. Last week, Jason requested that I bake some cupcakes for a UMC bakesale... SCORE! I was excited. I was actually getting the chance to make cupcakes like Gigi!!! Well... sort of. 

So I headed to Kroger to get my supplies...

I stumbled upon the Easter aisle and found the best candy imaginable....
 These are ah-mazing.

I found a cupcake recipe I felt comfortable enough to bake... Found here! And this is what I came up with... 


They were not the Gigi's masterpieces that I had imagined, but they did taste good descent enough to eat. And I must say, the Hershey's chocolate eggs were a nice touch... Although, Jason hasn't told me if anyone actually bought them. I don't think I want to know.

I also wanted to share a cupcake recipe that's a bit more friendly to the waste-line. It is a Hungry Girl recipe that I highly suggest baking. If you haven't signed up for Hungry Girl's daily emails... do it! They have great ideas for lighter recipes that are oh-so-easy! These are my Vanilla Cupcakes I made a while back! Yum!

Matthew 28:1-10
After the Sabbath, at dawn on the first day of the week, Mary Magdalene and the other Mary went to look at the tomb. There was a violent earthquake, for an angel of the Lord came down from heaven and, going to the tomb, rolled back the stone and sat on it. His appearance was like lightning, and his clothes were white as snow. The guards were so afraid of him that they shook and became like dead men.
The angel said to the women, "Do not be afraid, for I know that you are looking for Jesus, who was crucified. He is not here; he has risen, just as he said. Come and see the place where he lay. Then go quickly and tell his disciples: 'He has risen from the dead and is going ahead of you into Galilee. There you will see him.' Now I have told you."
So the women hurried away from the tomb, afraid yet filled with joy, and ran to tell his disciples. Suddenly Jesus met them. "Greetings," he said. They came to him, clasped his feet and worshiped him. Then Jesus said to them, "Do not be afraid. Go and tell my brothers to go to Galilee; there they will see me." (NIV)
